Minced Eggplant Recipe

Eggplant is a great source of vitamin C, K, B6, magnesium. Copper and folic acid. This recipe is not only delicious but also good in controlling high blood pressure.

  • 1 egg plant – make sure to buy a light big eggplant
  • 1 medium size finely chopped onion
  • 2 finely chopped tomatoes
  • 4 garlic cloves
  • 1 green chilly chopped
  • Oil
  • Vegetables spices – Turmeric and gram masala
  • Chopped coriander leaves
  • Salt to taste

Recipe

 

Rinse and dry the eggplant. Slit from one side and place the garlic cloves inside. Roast it on open flame which gives it a lovely smoky flavor.

Cut the eggplant into four pieces but don’t cut it completely. Put the eggplant into water and remove the burnt skin. Keep this aside.

Take a pan and pour around 1 tablespoon veg oil, put onions along with ginger garlic paste and allow the onions to turn golden brown. Add chopped tomatoes, spices and salt to the mix and stir for 2-3 minutes.

Mash the eggplant, put it in the pan and stir well. Cook for 10 minutes on a medium flame. Once ready put some coriander leaves for garnishing on the top of your delicious eggplant mince.
